Kaapi Khushi Kaapi Gham [Donuts]

Oh Coimbatore! The first city I landed in India in 2019 after not having been to India for 9 years and also the first South Indian city I traveled to. Well technically Bangalore and then a connecting flight, but lets ignore that. I often recall my time sitting in Shree Anandhaas, sipping cup after cup of filter kaapi to overcome my jetlag. The shuffling of the scalding liquid between the davarah and tumbler was quite therapeutic. Even in the 38ºC weather, I didn't mind a hot beverage of this decoction. A few weeks back, an idea popped into my head for filter kaapi donuts and I've shared my recipe for that below. Ingredients: For the coffee decoction: -8  tsp of coffee powder* -14 oz. water For the donuts: -2/3 cup of hot milk -1/3 cup of prepared coffee decoction -4 tsp of prepared coffee decoction -1/4 cup of granulated sugar -1 tsp of granulated sugar -1 packet of active dry yeast (should be 2.25 tsp) -4.5 cups of all purpose flour -0.5 cups all purpose flour
